If I had to name one side dish that has been my favourite since I was a kid, this would be it. These are a bit like french fries, but much healthier and better. You don’t have to fry your potatoes in 2 litres of oil to make them yummy and crunchy.
And the best thing? Everyone loves these spicy potato wedges. If you have little children eating at your dinner table, you can just leave the cayenne pepper out. Simple. These are so delicious for example with a roasted chicken or a whole baked fish. Or with anything else you can imagine.
Spicy Potato Wedges
makes 4 portions
takes 40 minutes to make
Ingredients
4-6 Rosamunda potatoes (a Swedish, floury sort)
4 tbsp canola oil or sunflower oil
a couple of pinches of salt
a pinch of cayenne pepper
a handful of fresh rosemary sprigs
Instructions
Preheat the oven to 220°C (425°F). Wash the potatoes and slice into wedges. Add the wedges to a baking tray, on a piece of baking paper. Drizzle with oil, season with salt and cayenne pepper. Spread the rosemary sprigs over the potatoes.
Roast the potato wedges in the oven for 25–35 minutes, until they are golden brown and crispy. Enjoy with mayonnaise or as a side for dinner.
