Oh cherry tomatoes! In summer I could eat good cherry tomatoes like strawberries (and I will do that!) – a handful after handful, without any seasoning. Even if it’s the season of these little red delicacies, sometimes you still need a little change. This is a simple recipe for marinating cherry tomatoes and it works trough the year. With garlic and balsamico, what could go wrong?
Serve the tomato bowl as a side with dinner or lunch!
Marinated Cherry Tomatoes
makes 1 bowl
takes 5 minutes to make (+ time for marinating)
Ingredients
3 handful of cherry tomatoes
1 tbsp balsamico
1 tbsp fresh lemon juice
1,5 tsp sugar
1 clove of garlic
little handful of parsley
pinch of salt
Instructions
Wash and cut the cherry tomatoes in half. Put in a bowl.
Add balsamico, fresh squeezed lemon juice and sugar. Crush the clove of garlic and chop the parsley. Add both to the bowl among the tomatoes. Season with salt.
Leave the tomatoes to marinate at least for 15 minutes.
