What could be better on a cold winter day than a warming, smooth soup? Well, sometimes a cold soup. Few days ago I was supposed to make creamy, silky and warming root soup but then I had to make a change of plans. I wasn’t feeling very well and I couldn’t cook nor eat anything heavy and warm. I needed something simple, fresh and cool.
There’s nothing more simple than cold soups made in a blender. You can just add all the ingredients into the blender and let it make all the work. And still you don’t have to give up from the good taste. So this is the yummy avocado-cucumber-yoghurt soup recipe I developed on that day.
Cold Avocado Cucumber Soup
serves 2-3
takes 5 minutes to make
Ingredients
2 avocados
1 ½ cups turkish yoghurt (natural)
1 cucumber (about 200 g)
2 cloves of garlic
few sprigs of chives
few sprigs of dill
pinch of salt
On top:
good olive oil
lime juice
chives
Instructions
Peel the avocados and remove the stones. Wash the cucumber. Chop the avocados and cucumber. Add all the soup ingredients in a blender and mix until smooth.
Garnish the dishes with few drops of olive oil, lime juice and chopped chives.
