This is quite a new recipe I developed half a year ago. I had a big, delicious pineapple waiting in my kitchen, but I didn’t know what to do with it. Well, of course I could have just eaten it like it was, but I wanted to create a dessert with it. And this is the recipe that was born on that day. So, here’s an easy and sweet dessert for ending a great dinner.
P.S. The whipped coconut-vanilla-cream works really well with other fruits and berries too.
Pineapple with Coconut cream
makes 4 portions
takes 10 minutes to make
2 dl (200 ml) whipping cream
0,5 dl (50 ml) coconut cream
4 tsp sugar
juice of half of a lime
0,5 tsp valinna extract
a small handful of hazelnuts
Whip the whipping cream and the sugar in a bowl. Add the coconut cream, lime juice and vanilla extract and whisk lightly.
Crush the hazelnuts a bit by using a knife or a heavy kitchen tool, like frying pan.
Cut the pineapple into 2 cm thick slices. You can cut the hard middle part away or just leave it on the plate after eating. Enjoy the fresh pineapple with whipped coconut-vanilla cream, hazelnuts and fresh mint.
